Our goal was to select three days of menus from among the ultra-processed menu from the NIH study, then “reverse engineer” them to be prepared with minimally processed ingredients.

Our selection process was shaped by which meals would best fit the definition of a “typical American.”

Among those meals, final selections were based on which ones for which we could efficiently source minimally processed ingredients.
